Using only shield has 79k def but with gun and shield it decreased by alot.

Note: I dont carry money here so theres no reason that the defense will decrease using a gun

Do you have warrior skills?

It looks like you have the "blind hit" and "stone man" skills upgraded. When you have no weapon equipped (or just a shield in this case) your character is considered to be using a warrior weapon by default. So the blind hit and stone man skills you have upgraded therefore take effect when you have only the shield equipped.
